For a delicious meal on a hot summer day
here is my recipe for a chilled salad:

BEET+CARROT with TUNA SALAD
✽ 4 cooked & cubed Beets
✽ 4 cooked & cubed Carrots
✽ 2 cans Tuna (real or imitation)
✽ 2 tablespoons Safflower Mayo
✽ 1/4 cup minced sweet Onions
✽ 1/4 cup minced sweet Parsley
✽ 2 Tablespoons Olive oil
✽ 1 Lemon

☞Mix your choice of Tuna, minced Onion, 
Safflower Mayo, squeeze lemon to top it off. 
Then refrigerate for 15 mins. ☞While Tuna chills, take fully cooked beets & carrots
and mix olive oil in it. ☞Once Tuna is chilled to your taste, serve 
Beet-Carrot mix and garnish with Parsley to taste.
